Instructions for using the Wine Transfer System (“THE RACKER”)

Make sure to place the primary pail approximately 63 to 75 cm. (25 to 30 inches) above where the carboy will be sitting just like you did in the past.
NOTE: THE RACKER will not work for this transferring from primary pail.
Fill pail as per wine kits instructions.
Follow the wine kits instructions for the primary fermentation stage.
Before it is time to move to the carboy, insert a spacer (2X4) on one side of the bottom of the pail so sludge will move to the lower side on the bottom of the pail. Do this about 12 hours before transferring the wine. This seems to work the best.
Insert “J” tube siphon hose into the high side of the bottom of the pail.(this stops it from picking up the sediment at the bottom) Siphon wine into the carboy, or if there is a tap on primary pail, connect hose and transfer into carboy. (Try to let the wine slide down the side of the carboy to reduce the bubbling).
Now follow wine kit instructions for this part of the process.
When it is time to transfer the wine again, that is the time when THE RACKER comes into play. Once again place a spacer on one side at the bottom of carboy so sediment will move to one side. Do this about 12 hours before transferring the wine works the best.
REMEMBER TO STERILIZE THE RACKER BEFORE USING. AFTER STERILIZATION IS COMPLETED, USE A CLEAN DRY CLOTH OR PAPER TOWEL AND DRY THE RUBBER STOPPER AND MOUTH OF THE CARBOY. (STOPS UNIT FROM POPPING OUT)
Insert the stainless steel tube of THE RACKER (with the 7″ plastic tube attached to bottom end of stainless steel tube) in the glass or plastic carboy. Make sure the end of THE RACKER’S pick up tube is placed on the high side at the bottom of carboy (this prevents THE RACKER from picking up the sediment)
Place other end of the plastic hose (with curved wire inside) onto the top of the other carboy that will be filled. The carboy that is to be filled may be placed on the counter or on the floor next to the full carboy.
(You now have a choice to leave your carboy on the floor or on the counter. (it works both ways)
Now plug the air pump into 110 volts outlet. When the pressure builds up in the carboy, you will soon see the wine start moving through the plastic tube and into the other carboy on the counter or floor. ( Adjust the hose so that the wine slides down the side of carboy).
This procedure may take about 14 to 20 minutes to transfer the wine from one carboy to the other on the counter, about 5 to 7 minutes if the carboys are side by side.
After racking is completed, follow wine kits instructions for the next part of the process.
If “racking” is required again follow instructions as above. This can all be done as many times as you wish now that THE RACKER makes transferring your wine so much easier.
BOTTLING TIME. There is a “bottle filling adapter” that comes with THE RACKER. This adapter attaches the bottle filler to the end of the plastic hose of THE RACKER. Once this is connected start THE RACKER pump and fill the bottle as you did in the past, only now you can do it on the counter instead of the floor.
Warning: ALWAYS REMEMBER to sterilize all the components that the wine will come in contact with.
Note: When you open the box with THE RACKER inside, you will see a length (7″or 18cm) of plastic tubing. This hose is connected to the bottom of the stainless steel tube that goes into the carboy. The purpose for this hose is so that THE RACKER will work in both glass or plastic carboys. (plastic and glass carboys are different heights)
You will also find a “bottle adapter” which is a piece of stainless steel pipe attached to a short length of plastic tubing (4.5″ or 12 CM long)
This unit will attach to the outside of the “pencil type” bottle filler. The plastic tubing attaches to the bottle filler, the stainless steel attaches to THE RACKER.
If your own a “Deluxe bottle filler” the plastic tubing attaches inside of the large plastic tube of the deluxe bottle filler. (Work best when carboy is the same level as bottling)
THE RACKER actually just replaced gravity if you really think about it !!
